I wasn't able to sleep in on Saturday morning because Alex and I were off to a polo match! 23 degrees and not a cloud in sight, it was a perfect winter day. Summer down under "officially" ended last week. In addition to the warm sunshine, we were spoiled with a fully catered event aka free booze, food, and transportation to and from the game. The food was tasty and veggie friendly too. Serveres came round' with rice paper veggie spring rolls, smoked trout on a mini pancake, small bowls of penne with tomato sauce, some sort of meat pie (aussies love their pies..barf), fruit kebobs dipped in honey and lavender, double chocolate brownies, and a few other meat appetizers. I stuck to the veggie rolls, fruit, and had a brownie of course ;) I also had some raw organic almonds in my clutch..just in case haha.
We returned to the city around 5pm after a full day of sun, booze, and socializing. By 6:30pm we were starving! Without hesitation we bolted to Veggie Bar, our favourite restaurant to date. We've been to Veggie Bar twice in ten days. No regrets. I had a giant coconut to drink and a plate of steamed veggies, tofu, fresh coriander, served with a peanut type sauce. It was absolutely amazing. I must recreate the satay sauce somehow! Alex had a duo of lentil dal and chickpea curry, served with brown rice and naan bread. We left full and satisfied, as always.
Sunday morning the crazyness kicked up another notch. Yes, there's more. We moved! Same condo, new apartment. We moved into a two bedroom/two bath on the 21st floor. Let me just say that the extra space is glorious! Our kitchen, living room area, and master bedroom is much bigger! It took us two hours to pack and move our stuff from the 14th to 21st floor. It took another two hours to unpack and set-up shop, again. Thank god we didn't have to move any furniture.
bananas. b-a-n-a-n-a-s!!! I got zero school work done this weekend. Doh! Good thing I made some healthy study snacks for the week ;)
Healthy banana muffins, 4-ways
- 1 1/2 cups spelt flour
- 1 tsp baking soda
- 1 tsp baking powder
- 2 large very ripe bananas, mashed
- 3/4 cup coconut sugar or other granulated sugar
- 3 tsp agave
- 2 tsp apple sauce
- 1 organic egg (or flax egg)
- 1 tsp mesquite powder (optional)
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tbsp chia seeds (optional)
- organic coconut, chopped raw almonds, cacao nibs, or anything else for your topping!
Preheat your oven to 350F and line a muffin tin with paper liners. Mix your dry ingredients (flour, soda, baking powder, nutmeg, cinnamon, mesquite, chia seeds) in a medium bowl. Hold off on the sugar. In another bowl mix together all your wet ingredients, the bananas, and sugar. Mash up the bananas until fully incorporated. A few banana chucks are encouraged ;) Now add your wet to dry and stir until it all comes together. Scoop your batter into your prepared muffin tin and top with desired toppings. I used organic coconut, chopped raw almonds, and cacao nibs. I also left a couple muffins plane. Bake for 16-20 minutes, or until a toothpick comes out clean. Cool in the pan for a few minutes then transfer to a rack to cool completely.
Alternatively, you can shove a muffin into your mouth post oven, like me. This recipe makes approx 8-10 muffins.
