Ch-ch-chia

I decided to experiment with my new found love for chia seeds. And ooo boy was I successful =) I was inspired by Gena's basic chia pudding recipe and decided to shake it up a little. 
Ingredients
  • 3/4 cup of organic chia seeds
  • 2 cups of unsweetened almond milk (approx)
  • agave to taste
  • dash of cinnamon
Mix the chia seeds and almond milk together. Stir consistently every 5 minutes or so. At first it will appear extremely liquidly, but after 15-30 minutes it will begin to plump up into a delightful rawlicious pudding! I was so excited to see how much my little chia seeds expanded. Once it appears nice and thick top it off with some cinnamon or carob powder. 

Extremely satisfying :) I'm going to add my leftovers to my morning smoothie, with banana and almond butter to boot.

  1. I love chia seeds! I had never tried them before this year, but now I eat them all the time. I've never tried the chia pudding, but they are good in smoothies or for overnight oats. The pudding looks good...the appearance reminds me of tapioca pudding.

  2. Same here! I feel as though this year is a chia seed movement! I also add them to my smoothies..but oo overnight oats (duh!), I'll have to try that asap.

    The pudding was definitely like a raw tapioca pudding, yum! :)
